Chicken and black bean spaghetti

Delicious, nutritious and easy to cook


No quantities given here. The fat will be in the chicken, beans and spaghetti so keep an eye on portion size.

Chicken breast with skin and fat removed and cut into bite-sized pieces
Courgette cut into small chunks
Leek, thinly sliced
Tinned black beans in salted water
Spaghetti (you can used left-over spaghetti or cook a new batch)
Soy sauce
Garlic glove, chopped
Fresh ginger chopped
Chili sauce to taste


Add some water and soy sauce to a frying pan and bring to the boil
Add the chopped leaks and let cook for a few minutes checking the water doesn't boil away, add more if necessary
Add the chopped chicken and let cook for a few minutes
Add the courgette, ginger and garlic
When the chicken is just about cooked add the spaghetti, unrinsed black beans, and chilli sauce to taste.
Allow the beans (and pasta if reheating) to warm through.

Serve with parsley garnish if available (not shown in picture)
