Smoked Haddock with Potato and Carrot Mash

Simple fish and vegetables


2 Smoked Haddock Fillets
4 or 5 Potatoes
3 or 4 Carrots
Dollop of fat free yogurt


Peel and chop potatoes and carrots in small chunks (so they cook quicker).
Place in saucepan with water to cover, bring to the boil then simmer until potatoes and carrots are soft.
Meanwhile put fish in a deep frying pan, bring to the boil and simmer until he fish is opaque (about 10 to 15 minutes)
Drain potatoes and carrots and mash together with a dollop of fat free yoghurt.
Plate up and serve.

You can use parsnip, turnip or swede instead of, or with the carrots.
