Roast Potatoes, Parsnips and Carrots

Ingredients

Medium sized Potatoes (about 1 to 2 per person depending on size)
Parsnips (about 1/2 per person depending on size)
Carrots (about 1 per person depending on size)
Spray Oil
Garlic (to taste)

Method

1) Pre-heat oven to 200c/gas Mark 6.

2) Peel the potatoes and cut into large chunks.

3) Do the same for the Carrots and Parsnips and chop into equal sized chunks.

3) Par boil potatoes, Parsnips and carrotts for about 10 minutes.

4) Lightly spray baking tray with low fat olive oil (or which ever you prefer) spray.

5) Drain potatoes, Carrots and Parsnips and put back in saucepan over high heat and shake for a few minutes to dry off and roughen.

6) Place on baking tray, lightly spray with spray oil.

7) Place on oven and cook for about 45 to 60 minutes occasionally checking after 45 minutes.
