Ingredients

Quick and easy prawn soup using pre-cooked rice. Use vegan miso for an even lower fat content.

  • Spring onions, chopped
  • Corgette, cut into thin rectangles
  • Boiled water
  • Frozen peas cooked in the microwave
  • Cooked prawns
  • I desertspoon vegan miso paste
  • Cooked rice, Korean sushi rice works well
  • Fresh, grated ginger

Method

  • 1 Add about 1/2 inch water to a medium sized pan and bring to the boil.
  • 2 Add the spring onions and corgette and allow to cook for a minute
  • 3 Add vegan miso paste making sure it dissolves
  • 4 Add boiling water (to the amount desired)
  • 5 Add cooked peas and cooked prawns and cook for a minute
  • 6 Add cooked rice and grated ginger to taste
  • 7 Once heated through, serve
