No-fat hash browns

Delicious hash brown created by a Chef catering an event for us!

Ingredients

Quantities to suit

50/50 sweet potato and white potato.
Onion.
Chives.

Method

Peel and dice the potatoes and chop or shred the onion.

Mix together both types of potatoes and steam for 20 minutes.

Add onions and steam a further 5 minutes.

Lightly mash all together, leaving some of the mix chunky.

Add chives, and salt and pepper to taste.

To finish put under the grill until crispy and brown.
