Microwave potato pie

Delicious and creamy layered potato to serve with whatever you fancy!

Ingredients

Serves 4

Two large (baking) potatoes
One medium onion
Half a leek
Small aubergine
Three cloves garlic
Half pint stock (vegetable or whatever)
Mixed (or your favourite) herbs

Method

Thinly slice the potatoes, onion,leek and aubergine chop the garlic
Layer alternating slices of potato and onion/leek/aubergine/garlic/herbs in a pyrex dish with a lid
Pour over the stock and cover with the lid
Microwave on full power for 20 minutes
Leave to stand for 5 minutes
Check all the liquid has been absorbed - if not, microwave some more.

Serve as potatoes with whatever you fancy|!
