Banana Bread

Delicious banana bread Fat per slice 0.34g (Based on 10 slices)


1 small bramley apple, peeled, cored and sliced (0.4g Fat)
200g plain flour (2.0g Fat)
140g caster sugar
1 ¼ tsp baking powder
½ tsp bicarbonate of soda
½ tsp ground cinnamon
2 egg whites (0.2g Fat)
3 bananas (0.8g Fat)


Pre-heat your oven to 180 C (160 Fan) Gas 4,

Lightly grease a 20 x 10cm loaf tin with MCT oil.

Heat the peeled and sliced apple in a small saucepan with a tablespoon of water until reduced to a mush.

Whilst this is going on stir together the flour, sugar, baking powder and cinnamon in a large mixing bowl.

Now mash your bananas roughly add to the apple in the pan and blend with a stick blender.

Add the egg whites and apple and banana puree to the dry ingredients in the bowl and stir until well combined.

Now pour the mix into the prepared loaf tin and bake in the pre-heated oven for 55-60 minutes.

You can test if it’s done by inserting a skewer, if it comes out clean the bread is cooked, if not cook for a further 5 minutes. Turn out onto a wire rack and cool before slicing.
