Lentil, barley, and butter bean stew with chicken

An easy to make, delicious and filling stew.


1 cup rinsed lentils
1/2 cup pearl barley
2 sticks celery chopped into slices
2 carrots sliced
1 onion chopped
1/4 teaspoon chilli flakes
1/2 teaspoon oregano
1/2 teaspoon ground cumin
6 cups chicken stock using fat free stock cubes

1/2 can butter beans drained
1 chicken breast cooked and cut into bite-sized pieces
1 teaspoon arrowroot and some water
Salt and pepper to taste


Place all ingredients except butter beans, chicken and arrowroot into a pot and bring to a simmer, once simmering put on the lid and cook until lentils and barley are soft - about 40 minutes
Add drained butter beans and cooked chicken
Combine arrowroot and water into a paste and add to stew
Bring to boil and then simmer for a further 10 minutes

Serve with baguette.
