Lemon couscous

Preserved lemon adds a subtle twist


Medium couscous
Preserved lemon copped into small pieces, pips removed
Chicken stock
Turkey breast cut into small pieces
Chopped leek
Broccoli cut into small florets
Chopped garlic


1. Put couscous in a serving bowl
2. Mix in lemon pieces
3. Add vegetables and chopped garlic to boiling stock and season as required
4. Allow to cook for a few minutes
5. Turn off heat and add turkey to poach in the liquid
6. While stock is cooking, microwave couscous for one and a half minutes
7. Add liquid to the couscous, stir it then add vegetables and turkey on top
8. Cover and leave to stand for five minutes
