Cheats Chilli

Quick and easy chilli with soya mince

 

Ingredients

Serves 4

1 medium onion, chopped.
Dash worcestershire sauce (optional).
2 cloves garlic chopped or crushed, or to taste.
1 mug soya mince (Textured Soya Protein/TVP).
1 and 1/2 mugs stock or water
1 400 gm tin chopped tomatoes.
1 410 gm tin reduced sugar and salt baked beans.
Chilli powder/flakes/paste to taste.

Method

Serves 4 people.

Place the rice and water in saucepan and bring to a boil, Then place lid on pan and turn heat down and simmer for about 15 minutes. Check after his time and if water is absorbed turn off heat and leave covered.

Meanwhile put 2 to 3 tablespoons of water in a new saucepan with a dash of Worcester sauce, put chopped onions and garlic in and heat until water is starting to boil, then turn heat low and cook for about 5 minutes until onions are soft. Add extra water if pan becomes dry.

Add soya mince and stock, bring to the boil then turn off heat and leave to stand for about 5 minutes to allow the soya mince absorb the stock.

Add the tin of tomatoes, baked beans and chilli and bring to the boil and then turn heat to medium stirring occasionally until hot.

Serve with the rice.

For stock, I use water and sprinkle beef stock cube over and stir in.

Use your favourite rice, i.e. Basmati, Long Grain, Brown etc.
